Here is a pretty awesome fact: this sparkling red is made using an old method called ‘col fundo’ (literally translated as ‘with the bottom’, meaning they include the lees and sediment to aid in the fermentation process). First the base wine is barrel aged and in the next year fresh juice is added – this causes a second fermentation and makes a sparkling wine. The sparkling occurs naturally in every bottle from trapped CO2 from the second fermentation and every bottle acts as its own fermentation tank! This wine is in the style of a DRY lambrusco with flavors of strawberry and rhubarb and a pleasantly tart finish! Looking for a red wine that you can drink for breakfast? We thought so.
